2 x sheets of ready to roll puff pastry
2 tbsp tomato sauce
150g mozzarella cheese (grated)
1 egg
1/2 tsp dried oregano
1/4 tsp garlic powder
30g parmesan (or similar hard cheese, grated)
Heat oven to 200C/180C fan/gas mark 6 and line two baking sheets with baking parchment (or lightly grease).
On a lightly floured surface, roll out the two sheets of puff pastry into equal rectangles.
Spread tomato sauce on one pastry sheet, leaving 1/2 an inch border around the edge. Sprinkle with grated mozzarella and place the other pastry sheet over the top.
Separate the egg, placing the yolk in a cup and beat lightly. Brush the pastry with the yolk and sprinkle with the oregano, garlic powder and grated parmesan.
Cut pastry into 27 equal lengths and gently twist. Place on the baking trays and cook for 15-20 minutes until puffed and golden.
This week, the children in Cookery Club made delicious banana or chocolate chip muffins (see photo).
