1 pack of oreo biscuits
60g butter
250g cream cheese
200ml double cream (whipped)
60g icing sugar
1 tsp vanilla extract
12 muffin cases
Place the muffin cases in a muffin tin.
Crush the oreo biscuits by hand or in a food processor until fine crumbs.
Melt the butter and combine with 3/4 of the crumb, then divide evenly between the muffin cases and press down firmly. Place in the fridge to set.
In a large bowl, cream together the cream cheese, vanilla, remaining cookie crumb and icing sugar.
Gently fold in the whipped cream.
Divide the mixture between the muffin cases and set in the freezer for 10 minutes.
This week, the children in Cookery Club made rice krispie treats and we got rather sticky, but it was fun!
