I make between 80-100 loaves of this bread a year; I've counted! I do use a little less salt (1.25 tsp) and warm up the water in the microwave for 30 sec. I prefer using a 3-quart Dutch oven (a 5-lb one will be ok, but the bread will be flatter, similar to focaccia bread or biscotti). A favorite breakfast food in our house is pumpkin chocolate chip muffins. With eight siblings, we go through a lot of these muffins each month. My mom started making them when I was very little and now I've learned the recipe. The recipe is very easy to follow and doesn't take too many ingredients. It is gluten free, so I usually use Bob's Red Mill Gluten Free 1 to 1 Baking Flour. However, it does work with all purpose gluten flour.
