Design thinking is a method and process that includes empathizing, defining, ideation, prototyping, and testing. People use it a lot because it helps see what the problem and some solutions to the problem, also is used to seek the problems of the users. Design Thinking uses empathizing with the users, defining the needs and problems of the users, ideation/trying different ideas and finding solutions, prototyping to create the solutions, and testing which is used to test the solutions you created.
