Ingredients:
Fresh mint leaves
1 egg white (lightly beaten)
Granulated sugar (enough for coating)

Instructions:
Pour sugar onto a small shallow plate.
Lightly brush both sides of each mint leaf with the beaten egg white.
Dredge the egg-white-coated leaf in the sugar until fully covered.
Place the sugared leaves on a rack to dry.
Let the leaves stand at room temperature until completely dry, about 3 hours.
Store the candied leaves in an airtight container at room temperature.1
