Me and my mom are making a lemon cake but it is gluten free because we can’t eat gluten. There are a lot of ingredients. You need: 200g of gluten free flour
65g almond flour
200g caster sugar
3 teaspoons of baking powder
a teaspoon of xanthan gum
a teaspoon of salt
225g unsalted butter softened
3 unwaxed lemons
4 eggs at room temperature
120g whole milk
6 tablespoons of lemon juice
1 teaspoon of vanilla bean paste
120g icing sugar
7-8 teaspoon lemon juice
Then you put it in the oven for 2hr. We forgot the sugar but it was still good. You take it out and you have to put the icing when it is cooled down. Then you have a good lemon cake.
