In the winter it is always fun to explore your community. On the 10th of January school was closed. When I woke up there was so much snow out the window! My sister, brother, and I went to get to get dressed to play in the snow.
I went sledding down a very big hill near a hotel. I had lots of fun and I went faster than all of my siblings because I weigh the least.
Later on,I met up with some friends and we went sledding on a hill in Ardenlee. There are lots of other fun things to do in the winter. I like to go ice skating. You don’t have to be good at it. You can just hold on to the side or hold someone’s hand. I fall over a lot, but I still like it.
If you are looking for something to do indoors you can go to Royal Lanes or Kedron Field House bubble pool.

This is my aunt's recipe that we eat every week!
1 pound ground beef
1 pound ground pork
1 onion
2 celery sticks
2 carrots
½ pint beef stock
2 tbsp tomato puree
1 cup milk
2 tbsp worcestershire sauce
salt and pepper
2 cans of tomatoes
spaghetti noodles
1 handful of red lentils (optional for extra protein)
olive oil
Put a couple of tablespoons of olive oil into a large heavy based pan. Cook onions and celery until they're nice and soft; slow and low heat. Then add the meat, really chop it in the pan with a couple of wooden spoons so you're sort of jabbing it at it and breaking it down, to avoid big lumps. Once the meat is all brown, add your carrots. Once the carrots are cooked add the stock and let that evaporate. Then add the tomato puree, and worcestershire sauce and let cook until there is very little liquid in the pan. Add the milk which makes the meat soft and cook that down, then you can add the cans of tomato and the lentils too. Bring to the boil and then turn the heat down as low as it goes. Put a lid on and cook slowly for a couple of hours. Keep checking to make sure it does not dry out. If it does, add water. Season with plenty of salt and pepper.Add Spaghetti noodles to a pan of salted boiling water and cook until soft. Drain and serve with Bolognese sauce.
Jelly:
230 ml (scant cup) of orange juice
¾ teaspoon of agar agar powder (not flakes)
1 tablespoon of lemon juice
40 g (3 tablespoons) of caster or granulated sugar
Sponge Cakes:
75 (½ tablespoons + 2 tablespoons) plain (all purpose) flour
5 g (½ tablespoons) cornflour (cornstarch)
1 tablespoon of baking powder
50 g (¼ cup) caster sugar
80 ml (⅓ cup) unsweetened non dairy milk
30 ml (2 tablespoons) of neutral oil (such as sunflower)
1 tablespoon of orange extract
125 g (4 ½ oz) of dark chocolate finely chopped
1. Start by making the jelly. Line a 20cm/8in square cake tin with baking parchment. Place the agar agar powder in a saucepan and gradually whisk in the orange juice, making sure there are no lumps.
2. Whisk the lemon juice and sugar then bring the mixture to a boil. Boil for 1 minute, stirring constantly. Pour the jelly into the tin and refrigerate until set (about 1 hour)
3. Preheat the oven to 180 degrees Celcius or 350 degrees fahrenheit. Grease a 12 hole bun or muffin tin.
4. Sift together the plain flour, cornflour and baking powder into a bowl. Add the sugar milk, oil and orange extract and whisk with a balloon whisk until smooth
5. Divide the batter between the tin, about one tablespoon of batter per hole. Bash the tin on the counter to burst any air bubbles.
6. Bake for 12 minutes until a skewer inserted into the center of one of the cakes comes out clean.
7. Let the cakes cool in the tin for 5-10 minutes then turn them out on a wire rack to cool completely.
8. Once the jelly is set, use a 4c round cutter to cut out the circles.
9. Use a sharp serrated knife to trim the tops of the cooled cakes to level them. Place a jelly circle on top of each cake.
10. Melt the chocolate, either in short burst in the microwave, or in a bowl over a pan of simmering water (don't let the bottom of the bowl touch the pan)
11. Use a teaspoon to spread a little of melted chocolate over the top of each cake, making sure the jelly is fully enclosed.
12. Use the back of a fork to gently make an indentation in the top of the chocolate (optional, purely for looks) then leave them before serving.
