Companion Animal Management | Available to grades 9-12
Companion Animal Management looks at animal science technology and how it relates to raising small animals and the family pet. Topics include dogs, cats, rabbits, and other small animals. Laboratory activities will cover anatomy, grooming, and management of companion animals. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.
Animal Production and Processing | Available to grades 9-12 *Two trimester course
Animal Production and Processing covers techniques and management of livestock such as dairy, beef, swine, sheep and poultry. The class goes one step further in that students discuss and practice the processing, packaging and evaluation of animal products. The agriculture laboratory and walk-in cooler allow for major labs dealing with meat processing, food science, and animal evaluation. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.

Equine Management | Available to grades 9-12
The horse industry in Wisconsin is a quiet powerhouse. As you travel through Southeastern Wisconsin, you notice the countryside dotted with horses and horse stables. Southeastern Wisconsin has the highest density of horses per square mile than anywhere else in the United States. Horses are not only a hobby; they are an industry. Students explore and enhance their understanding of the horse industry. Students learn about horse anatomy, nutrition and reproduction. Once students understand how a horse functions, they also study management of horses including care, housing, equitation (riding) and health maintenance. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.

Veterinary Science | Available to grades 11-12 *Must have completed at least 1 of the previous courses.
This semester class is designed for the students who have a love for animals and/or interested in becoming a veterinarian or veterinarian technician. Students gain an understanding of animal anatomy, animal physiology, proper animal restraint, injection techniques, eye care, and disease diagnosis. Problem solving and decision making skills are the learning focus along with hands on activities and labs. This class enhances current science knowledge and applies it to situations found in the world of veterinary science. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.

Horticulture | Available to grades 9-12
Color, color everywhere in the world of flowers, shrubs, vegetables, houseplants and all other plants. This is the place to experiment with all the plants. Get your hands dirty! Botany, tissue culture, hydroponics, and greenhouses are only some examples of the leading edge of horticulture. Grow your interest in plants as we explore plant science in this interactive course. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects. Prerequisite to other plant pathway courses.
Ornamental Horticulture | Available to grades 9-12
Plants surround us every day of our lives and improve the appearance and functionality of the space around us. Students will develop skills and explore careers related to floral design, landscape design, urban forestry, and landscape management. Students will also continue to explore and enhance their own professional growth through Supervised Agricultural Experiences (SAE.)

Greenhouse Crops | Available to grades 10-12
Continue your exploration of the horticulture industry and diversity of career options it offers. Advanced greenhouse production and marketing are key components of the class as students begin with an empty greenhouse and be involved in all aspects of bedding plant production, greenhouse operations and marketing. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.

Alternative Growing Systems | Available to grades 9-12
Students will explore alternative growing methods to producing and harvesting plants to help meet the future food, fiber, and fuel needs for the planet. Students will learn about hydroponics, aquaponics, and aeroponics while raising plants and fish in the school greenhouse. Students will also continue to explore and enhance their own professional growth through Supervised Agricultural Experiences (SAE.)

Wildlife | Available to grades 10-12
Wildlife students will explore the biology, behavior, and business of wildlife management. We will explore habitat management, management techniques, human/wildlife relationships and also complete a unit of fish taxidermy. Students will also develop their own leadership and professional development plan as part of Supervised Agricultural Experiences (SAE) to provide relevant, hands on learning.

Forestry | Available to grades 10-12
This course deals with the identification, management and harvesting of forests on a large scale as well as our own backyards. Managing forests to meet ecological, environmental, and economic needs required an understanding of plant science, biology, business, human behavior and much more. We will be using the wooded property on campus to help facilitate our learning. Students will also develop their own leadership and professional development plan as part of Supervised Agricultural Experiences (SAE) to provide relevant, hands on learning.
Natural Resources Management | Available to grades 10-12
This course provides students with a background in environmental resource management. The student analyzes ways of managing land, soil, water, air, and energy resources. This class includes several activities pertinent to the conservation of our natural resources. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.

Environmental Sustainability | Available to grades 10-12
In Environmental Sustainability, students investigate and design solutions in response to real-world challenges related to clean and abundant drinking water, food supply, and renewable energy. Applying their knowledge through hands-on activities and simulations, students research and design potential solutions to these true-to-life challenges.
Special Notes: This class is worth 1.0 credit of an science equivalency. Students also have the opportunity to earn dual credit from St. Cloud University. This class is offered every other year. (2021-2022, 2023-2024, 2025, 2026)
Food Science 1 | Available to grades 9-12
Learn about the unique way foods are processed, prepared and preserved. In addition, students will prepare, consume, and critically evaluate various versions of breads, cheese and other food products. This class will benefit students interested in a career in the food industry, agriculture, and general sciences. Prerequisite for Food Science 2.

Food Science 2 | Available to grades 9-12
Have an idea for a new or improved food product? Students in Food Science II will focus on two key elements of food science. Improving food products and ensuring food safety for consumers. Students will model the process of food product development while working towards earning Wisconsin's FaBSafe certification. Students will also continue to explore and enhance their own professional growth through Supervised Agricultural Experiences (SAE.)

Agriscience | Available to grades 9-12
Agriscience is a course for any student that has a natural curiosity to explore challenges and seek solutions. The ability of the agriculture industry to meet the needs of the human population in an environmentally sustainable way depends on our ability to identify problems and seek solutions. Students will also develop their own leadership and professional development plan as part of Supervised Agricultural Experiences (SAE) to provide relevant, hands-on learning.
Leadership and Communications | Available to grades 11-12
Confidence, self-motivation and the ability to work with others is a key factor to your success. Today’s employers are looking for individuals that are ready to take on the challenges of tomorrow. Join this fast-paced, student driven class that focuses on leadership styles, group dynamics and motivation. Students also explore the role of communications from person to person conversations to mass media. This is a great class for anyone that is looking to succeed in the workplace. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.
Biotechnology | Available to grades 10-12
Biotechnology is the new revolution in agriculture, natural resources, and medicine. Scientific advancements in biotechnology are changing how we live everyday. This class allows students to explore how biotechnology is having an impact on animal science, food science, plant science, and the environment. We address personal career skill enhancement and develop/continue Supervised Agricultural Experience (SAE) projects.
