Ceviche is definitely one of the most popular dishes amongst locals and tourists. It's cool, refreshing and really flavorful. They are made with just a few ingredients: Pieces of raw white fish, lime juice, slivered red onions, salt and sliced chili peppers. The salt and lime cook the fish a tiny bit leaving it delicate and tender. You’ll find this dish everywhere along the coast of Peru, from little stalls on the street to the finest restaurants.
Causa is one of Peru's best dishes, it’s a small cake made with various layers. The top and bottom layers are usually potatoes mashed with salt and chili sauce. In between these potatoes you'll find other ingredients like avocado, shredded crab meat, chicken and egg and mayonnaise.
This dish has an Asian influence to it, Lomo saltado means stir fried beef and it’s on nearly every Peruvian menu. It’s made of soy-marinated beef wok-fried with thick slices of onions, tomatoes and aji chilies. It’s often served with things like rice and fries.
This dish is most easily translated as ‘Creamy chicken”. Shredded chicken is cooked down with a rich sauce of cream, cheese, walnuts and chili served with a serving of rice, a hard-boiled egg and an olive.
No part of the animal is wasted in carnivorous Peru, this dish is barbecued cow heart skewers marinated in a combination of garlic, vinegar and chili. It’s usually served alongside a baked potato and some extra chili sauce.
