We did this lab to demonstrate the properties of water (cohesion, adhesion, capillary action) and how they can be used to bring the blue liquid in the beaker up the celery and make the ends of the leaves blue.
Water's polarity and structure gives it the ability to dissolve substances.
Cohesion is water molecules sticking to each other. (Helps with Surface Tension)
Adhesion is when water molecules sticks to other molecules. (Helps with action in xylem)
(both help with capillary action)
when extra hydrogen bonding happens between water molecules and allows liquid to resist external force.
