November 10, 2025 – Students in HOSP 323: Introduction to Event Planning and Management had the opportunity to learn from Carl Cortez, Director of Events & Catering at TPC Monterey at Pasadera, who shared his expertise on designing and executing seamless, memorable event experiences.
Carl provided an engaging overview of event operations at a premier private club, highlighting the differences between member events—such as holiday celebrations and wellness activities—and outside catering for weddings, corporate functions, and nonprofit gatherings. He explained how TPC Monterey blends creativity with operational precision to craft exceptional guest experiences.
He introduced the “Three Best Friends” model, which illustrates collaboration among event sales, event planning, and event operations, and demonstrated how tools like Banquet Event Orders (BEOs) and detailed floor plans ensure smooth communication and coordination from client inquiry to event completion.
Carl also emphasized the influence of food and beverage in creating atmosphere and guest engagement, encouraging students to view dining as both a sensory and emotional experience. He highlighted TPC Monterey’s commitment to sustainable hospitality, including local sourcing, alignment with the Monterey Bay Aquarium's Seafood Watch program, and efforts to reduce single-use plastics.
Students left with a deeper understanding of event coordination, teamwork, and leadership within the hospitality industry.
