When I was 5 years old, my parents enforced a rule that we would not eat meat for dinner at home ever again. I was the kid who would always order steaks, burgers, and meat-lover pizzas for dinner. I never really understood why eating vegetables was better for your health until I read The China Study, which essentially argued that proteins from animal products (primarily meat and milk, especially) encouraged cancer growth.
Then, during the COVID-19 Pandemic, I wanted to know what more I could do about my health. It was imperative to maximize your immune system and health in order to fight back against COVID-19, especially given how deadly it was at the time. Thinking back to my childhood, the best way to control your own health was through a nutritious diet providing sufficient vitamins and minerals to strengthen one's overall health. Diet was the key.
I began to research the applications of microgreens. I reached out to a local small business, Sensible Homestead, at the Vista Farmer's Market.
