Muffins...how can you not love them?
You can have big ones or small ones. Ones with chocolate and ones with vegetables. They can be sweet or savoury. They can be in your lunchbox or on the breakfast table.
Again - experiment with your favourite flavour combinations - you can rarely get it wrong.
NOTE - Every family probably has their own go-to muffin recipe. I personally like to add a bit of natural yoghurt or sour cream, use olive oil, and reduce the sugar a bit (maybe putting in some apple sauce instead)...

220g self-raising flour
3/4 cup vegetable oil
3/4 cup milk
1/2 cup sugar (or replacement)
1 egg
Combine dry ingredients. Combine wet ingredients. Mix everything together, making sure not to over-mix. Divide mixture into papered muffin tins and bake at 180C for about 20 minutes.

Citrus zest and juice

Honey
