Sad el Hanak is an Egyptian dish. The literal translation of its name means stuffing one’s mouth because of its dense properties. It was previously prepared often, especially during winter. However, as time went by, it lost its popularity. In my case, my great-grandma was the one who frequently prepared this dish. The reason behind her admiration for this dish is that it reminded her of a very similar Turkish dish called "Un Helvası" (Flour Halva). After interviewing my grandma to gain more insight, I was highly intrigued and eager to try this dish. What I admired about the interview was how descriptive my grandma was with her mom's recipe. She ensured several times that it needed to be cooked with heart and focus.
Ingredients
Sugar
Flour
Ghee
Milk / Water
Optional: Nuts
Recipe
In a bowl dissolve sugar in water or milk.
In a small saucepan over medium heat, melt ghee
Add nuts or sesame seeds, optional, to toast a bit.
Add flour to the saucepan
Stir flour until it is golden.
Pour the sugar mixture over and keep whisking until a smooth paste forms.
For decoration, nuts can be added and it can be shaped into balls.
