Chocolate Cheep Coikois (vegan)

The classic homemade treat, without the eggs or butter.

Ingredients

    • ½ cup vegetable shortening

    • 1 cup light brown sugar

    • ¼ cup non-dairy milk

    • 1 Tbsp vanilla

    • 2 cups all purpose flour

    • 1 tsp baking soda

    • 1 tsp baking powder

    • 2 tsp cornstarch

    • ½ tsp salt

    • 1 cup vegan chocolate chips or chunks

Preparation

    1. Preheat oven to 350 degrees F.

    2. With a beater, cream the shortening and sugar together.

    3. Add the soy milk and vanilla and mix.

    4. In a separate mixing bowl, sift together the flour, baking soda, baking powder, corn starch, and salt.

    5. Add the wet ingredients to the dry and mix in by hand until thoroughly mixed into a thick dough.

    6. Add the chocolate chips or chunks and mix.

    7. Roll into balls and place evenly on a baking tray covered with parchment paper.

    8. Bake for 15 minutes until the edges are set and they are very slightly browned on top.

    9. Allow to cool before transferring to a wire cooling rack.

    10. Once properly cooled store in an airtight container.
