Crispy Sage Roasted Cauliflower
Roasted cauliflower with crunchy sage leaves and pine nuts.
Ingredients
1 kg cauliflower broken into 1" chunks
2 tbsp olive oil
1/4 cup butter or margarine
30 whole large sage leaves
1/4 cup chopped pine nuts
Salt to taste
Preparation
Preheat oven to 475 degrees.
Toss the cauliflower in the olive oil in a large bowl and add the salt.
Line a baking sheet with parchment paper and spread cauliflower on top.
Bake for 25 to 28 minutes, until deeply browned.
Melt butter in a pan over medium heat.
Add pine nuts and sage leaves and cook for 3 to 5 minutes, until darkened, crisp, and slightly curled.
Transfer cauliflower to serving dish and pour sage mixture over top.
You can substitute almond slivers for the pine nuts if necessary.
