Mermaid Food Recipes

Oyster Cookies

Need (for 1 cookie): 2 vanilla wafer cookies, strawberry frosting, and a yogurt raisin

Take two vanilla wafer cookies, spread strawberry frosting on each side and put a yogurt raisin in the middle to look like an oyster with a pearl inside.

Mermaid Bark

INGREDIENTS

1 package bright white candy melts

1 package purple candy melts

1 package turquoise candy melts

Round chocolate shimmer candies, in varied sizes and coordinating colors

Silver sprinkles

Gold disco dust

INSTRUCTIONS

Pour each color of candy melts into their own microwave safe bowl. Microwave the candy melts for 30 seconds. Stir. Microwave for another 30 seconds and stir. The candy melts should be completely melted and smooth. (If not, microwave for 30 seconds and then stir.)Line a baking sheet with a silicone mat or waxed paper.Make dollops of each of the candy melt colors all over the prepared baking sheet. Use an offset spatula to swirl the colors together and spread the candy to the edges of the baking sheet. The less you can mix the colors the better. You want the colors swirled, not completely mixed together.Sprinkle the top of the bark with chocolate shimmer beads, silver sprinkles, and gold disco dust.Refrigerate the candy for 15 minutes, or until set.Peel the candy off the silicone mat (or waxed paper) and use your hand to break into pieces.Refrigerate until ready to serve.

NOTES

Disco dust is optional. I liked the glitter effect it gives. If you prefer to not use disco dust, any gold sprinkle would work just fine too.



Mermaid Ice Cream

Whip heavy cream into a soft whipped cream.Add sweetened condensed milk and a little vanilla extract (my daughter's favorite ice cream flavor).To make it "mermaid ice cream" split the mixture into 4 bowls and added food coloring to each bowl, stirring it until the color is mixed in. I used teal and purple food coloring and I made three shades of teal (light, medium and dark) just by adding a little more teal food coloring to each bowl. I made one bowl of dark purple. Mermaids come in all colors so you do you and make your no-churn mermaid ice cream any color combination you like!Once you've got your bowls of colored ice cream mixture drop them into a loaf pan (I used a Pyrex one but you can use a metal one also). You want to kind of make it random, so do a couple of scoops of one color in one spot then a couple of scoops of another color in another spot, just plop them all into the loaf pan randomly.When you're done take a knife and drag it through the mixture 2 or 3 times making swirls. Then top the ice cream with whatever sprinkles you've chose. We used gold sprinkles, and different size pearl sprinkles and pearl chocolate balls.Once the sprinkles are on the ice cream the loaf pan gets covered with plastic wrap and goes into the freezer for 5-6 hours.

Ocean Water

Ingredients3 tablespoons water3 tablespoons sugar1 teaspoon coconut extract3 drops blue food coloring2 12 ounce cans lemon-lime sodaInstructionsIn a small microwave-safe bowl, combine water and sugar. Heat in microwave for about 1 minutes. Stir until sugar is completely dissolved.Pour the sugar mixture into a pitcher. Add coconut extract, food coloring, and soda. Stir to combine. Enjoy over ice.You can add swedish fish to the drink if you would like.

Mermaid Cupcake

1 box white or vanilla cake mixPLUS ingredients called for on box

The day before making these cupcakes, start preparing the chocolate mermaid tails.

They each need about 2-3 hours to set.

TIP: Leave them on the counter to set, do not refrigerate.

If you set them by the fridge, when you pull them out and pop them, they will sweat and melt.

Just leave on counter until the candy re-hardens.

If you are making more than one tail, you will need additional molds to do more than one at a time.

Melt the candy melts one at a time – microwave for 35 seconds, stir, and reheat as needed.

Portion about 1/4 to 1/3 cup of the melts into the mermaid silicone mold and let set at least 2 hours.

Store in Tupperware container on counter.

Now let's get started on making these cupcakes!

Preheat oven to 375F.

Prepare the cupcake batter according to package directions.

Portion into cupcake liners, about 1/4 cup of batter per liner.

Bake until the tops are set and an inserted toothpick comes out clean.

To make the frosting, combine the butter, sugar and vanilla extract.

Add the cream until you reach your desired consistency.

Portion out into 4 bowls.

Dye each bowl a different color using the food dye.

Use an offset spatula to smooth 2 Tablespoons of frosting onto each cupcake, then dip into the sprinkle medley.

Swirl a different color of frosting on top of each cupcake so you have two contrasting colors of frosting on each cupcake.

Sprinkle 1 teaspoon of sprinkles over the the top.

Put glitter on each mermaid tail then put the tail into a cupcake.
