What do we mean when we say, "whole-food philosophy?"

Nutrition Standards 

A healthy dietary pattern will benefit everyone. The core elements that make up a healthy dietary pattern include:

•Vegetables of all types - eat the rainbow - dark green, red, orange, beans, peas, and lentils; starchy and other vegetables

•Fruits, especially whole fruit

•Grains, with a focus on whole grains, including ancient grains, black and brown rice, quinoa, buckwheat, oats, popcorn, and farro

•Dairy, including yogurt and cheese

•Protein foods, such as lean meats, eggs, and seafood; plant-based proteins, including beans, peas, lentils, nuts, and seeds

•Healthy Fats, especially those in whole foods like avocado, fatty fish such as salmon, whole eggs, 70%+ dark chocolate, nuts, and seeds

Organic, Seasonal, Locally Sourced

Local seasonal crops picked at their peak of ripeness are full of flavor, and studies have shown that fruits and vegetables contain more nutrients when allowed to ripen naturally on their parent plant.


Not only does food grown on a nearby farm leave a smaller "FoodPrint" and support the local economy, but also tastes better and is better for you than food that has traveled far and has ripened after harvest. 

PROGRAM GUIDELINES

Dairy & Alternative Dairy 

We offer a variety of dairy and alternative dairy products daily, with a minimum of (2) vegan-friendly alternative options

Protein

We offer a variety of proteins and plant-based proteins daily

We offer sustainably-sourced seafood at least two times each week

Desserts

We offer desserts and sweet, satisfying choices that can help limit added sugars and saturated fats in our diets

Trans Fats & Highly Processed Foods

We eliminate foods containing artificial or industrially produced trans fats

We avoid highly processed ingredients and foods

Beverages 

We offer a variety of ways to hydrate naturally and healthfully, including a variety of sustainably sourced and packaged water

Informed Dietary Choices

Our prepared and packaged foods will offer clearly-identified food allergens and ingredients

Easily Accessible Produce

We offer a variety of at least (3) non-fried, locally sourced, seasonal vegetables

We offer a variety of at least (2) seasonal fruit options

Whole, fresh, seasonal hand fruit is available every day

Whole Grains

At least 50% of offered grains are whole grains, and most of our chefs choose whole grains for 100% of their menus

At least 20% of our whole grains are sourced from a regenerative  source
