Food Lab Plans
This is an example of the lab plans each group fills out for each recipe they cook. This gives the group structure to assign and change roles throughout each recipe. The plan also gives students step-by-step instructions such as ingredients, equipment, and which task is getting completed by which group member.
Unit Lab Assessment
A factor I feel is important to add to the Culinary Curriculum is feedback. Every recipe does not come out perfect so it is important to reflect on what could be changed about the recipe or added to make it the best. Each unit has one or more recipes. Each student will fill out a unit recipe assessment with their honest feedback after tasting the food. After the unit is over students will submit it for my review. It is 20% towards their lab grade. This helps me gather information to better the program with the recipes we create in the classroom along with the group work.
