Menu

The majority of recipes are taken from The Science of Cooking, a few are adapted or conjectural. 

Main Dining Hall Menu (times are estimates at this point)

GF = Gluten Free

V = Vegetarian 

Be advised! We will do our best to avoid cross contamination in the main kitchen, however, there will be wheat flour, meat and poultry in the same kitchen. 


Friday's potluck will begin at 7 pm and include:

Dutch Pea Soup (split peas, water, yellow onions, olive oil, cumin, saffron) it is Gluten-free and Vegetarian 


Barley Soup with Beef and Onions (beef, beef broth, yellow onion, garlic, leeks, pearl barley) 


Assorted bread (we'll have GF separated) 


Please write out ingredients used in a dish you contribute. 


Saturday from 8 to 9 am Breakfast:

Multigrain porridge (rolled oats, buckwheat groats, millet, butter, water, salt) with toppings (cream, sugar, nuts, jam) GF, V 


"For Saturday" (baked french toast casserole)

(Eggs, cream, butter, bread, sugar, ginger) V 


Baked Scrambled Eggs with Herbs (eggs, butter, parsley tarragon, chives) GF, V 


Assorted Bread (wheat or GF flour, yeast, oil water, salt) 


Ricotta cheese with parsley, dill, chives GF, V 


Cold sliced pork roast GF

with pear mustard (pears, mustard seed, apple cider vinegar, spices for hyppocras, honey) GF, V 


Coffee/tea, creeam and sugar 

Lunch will be served from 12-1:00 pm:

Garlic cucumber salad (cucumber, garlic, wine vinegar, salt) GF, V 


Red cabbage with onions (red cabbage, red onion, wine vinegar, olive oil, sugar, salt, black pepper) GF, V 


Chickpeas (chickpeas, olive oil, garlic) GF, V 


Koportata (layered chicken, bread, mozzarella, garlic infused beef broth) 


Spiced Pears (pears, honey, black pepper, saffron, clove, cinnamon) GF, V 


Dinner served after 6 pm:

Marinated olives (black and green olives, garlic, olive oil, wine vinegar, marjoram, parsley) almonds, grapes GF, V 


Cheese Pogacsa (wheat flour, salt, eggs, sour cream, shredded cheese) V 


Honey chicken (chicken thigh, honey, ginger, black pepper, saffron GF) and Nokedli (flour, eggs, butter) dumplings served separately V 


Beef with rice and garlic harvester sauce (beef, beef broth, onions, celery root, parsley, black pepper, rice, butter) beef and rice (GF, V) served separately, sauce on the side. 


White Mushrooms w/ black pepper (button mushrooms, butter, ginger, black pepper) GF, V 


Carrots and Parsnips (rainbow carrots,  parsnips, black pepper, saffron, olive oil) GF, V 


Turotorta with sour cherry sauce (turo cheese, eggs, sour cream, sugar, tart cherries, cherry juice, honey, cinnamon) GF, V



Sunday Breakfast 8 to 9 am: 

Pork roast and root vegetable hash

Baked Porridge with Spiced Pears GF, V

Pain Perdu with Cherry Sauce V

Coffee, tea, cream and sugar 


Q &A

Q: If I forgot my feastware, is there some I may borrow?

A: Yes! There will be clean plates, cups, bowls and utensils stacked on a cart. Please help yourself. 


Q: How will food be served?

A: Buffet style, one line on each side of the rectangular tables. Remember, there are others behind you, return to the back of the line if you want seconds so everyone has a chance to eat. Use utensils provided. To avoid cross-contamination, do not use a utensil with a different dish. 


Q: Is seating for meals assigned?

A: No, feel free to move to another seat, ask your neighbors if it's open. 


Q: Will beverages be provided?

A: Ice water will be in pitchers or a dispener in the hall. Coffee in the morning, or until the pot is empty and hot water as long as it's refilled. 


Q: Can we have alcoholic beverages?

A: Yes, however, please take your empty containers with you. 


Q: Can I leave my things in the dining hall while I attend classes?

A: Sure, remember to take it with you when you leave site. 


Q: Where can I wash my dirty dishes?

A: Please scrape waste into the trash and stack your dishes and utensils in the racks at the passthrough window to the scullery room. Volunteers will run the racks through the dishwasher, and leave clean items to dry for you to pickup. We are not responsible for damage to your property. If your things cannot go through the dishwasher, you may hand wash after the dishwasher is finished. 


Q: Can we have a fire in the fireplace? 

A: Yes, in the main dining hall only. Bring wood, and please be responsible for care of a fire if you start one.
