Millet
1 cup millet
2 cups water
3/8 tsp salt
Add the millet and oil to a pot and toast over medium heat for 4-5 minutes, stirring frequently. Add the water and salt, stir together, and bring to a boil. Cover the pot and lower the heat until simmering, then cook for 16-18 minutes. Remove from the heat and allow the millet to sit, still covered, for 10 minutes. Gently fluff with a fork.
Quinoa
1 cup quinoa
2 cups water
1/2 tbsp vegetable oil
3/8 tsp salt
Pour the quinoa into a mesh strainer and rinse under cold water for at least a minute, then drain well. Add the quinoa to a large pot over medium heat along with the oil and cook for 1-2 minutes, stirring occasionally. Add the water and salt, cover the pot, and bring to a boil over medium-high heat, then decrease the heat to maintain a gentle simmer. Cook for 15 minutes or until the quinoa has absorbed the water, then remove the pot from the head and let sit, covered, for an additional 5 minutes. Gently fluff with a fork. (You can reduce the salt and add vegetable broth instead of water.)
Oven Brown Rice
1 1/2 cup medium or long-grain brown rice
2 1/2 cups boiling water
1/2 tbsp non-dairy margarine
3/4 tsp salt
Preheat the oven to 375°F. Add all of the ingredients to an 8x8 baking dish and cover tightly with aluminum foil. Bake for 75 minutes. When finished, remove from the oven, uncover, and gently fluff the rice. (You can reduce the salt and add vegetable broth instead of water.)
Oven Barley
3/4 cup + 1 tbsp pearl barley
2 1/2 cups boiling water
1 tbsp non-dairy margarine
1/2 tsp salt
black pepper to taste
Preheat the oven to 375°F. Add all of the ingredients to an 8x8 baking dish and cover tightly with aluminum foil. Bake for 60 minutes.
Oven Grits
3/4 cup cornmeal
3 cups boiling water
1 tbsp non-dairy margarine
1 tsp salt
black pepper to taste
Preheat the oven to 375°F. Add the water to an 8x8 baking dish and slowly whisk in the cornmeal, then stir in the remaining ingredients. Bake uncovered for 45 minutes, then remove from the oven and stir with a fork until grits come together.
