La maestra

This is the arial view of Signora's hometown.

It is at the center of a valley - Vallo di Diano - and surrounded by 12 more towns.  At the top of the hill is the historic center / centro storico.

Signora's home is down in the valley - 

in the hamlet of San Raffaele 

Here you can see some great images of the historic part of town- Up on this hilltop there are thirteen churches and the bishop's domain for the region.  The town counted heavily on help from heaven during its many trying times- and it is still going strong as the center of the entire Vallo di Diano

In this brief video you can see  how the nonnas of Teggiano make their unique ravioli - squared, not round, and often with goat's milk ricotta.  

My grandmother always made them like this and had a special antique fork with sharp tines to close the ravioli securely.   They were always fresh and delicious!
