srilankan curry powder:
** Ingredients **
2 tsp coriander seeds(dhania seed)
1 tbsp cumin seeds(zeera)
1 tbsp fennel seeds(saunf)
1 tsp fenugreek seeds(meethi seeds)
1 small cinnamon stick, broken into small pieces(dalchini)
6 cardamom pods(elaichi)
6 cloves(long)
6 dried curry leaves
1 tsp cayenne pepper( red chilli)
1 table spoon basmati rice
**.......procedure......**
1)Heat a heavy-bottomed pan or skillet until it becomes hot.
2) Dry roast all the ingridients except red chilli powder individually over medium heat. Stir constantly and heat until they turn dark brown.
3)Remove from the heat. Leave to cool.
4)Grind the roasted mixture . Mix in the cayenne(red chilli powder)
5)Transfer to an airtight container. Use in curries and other Sri Lankan dishes.
