11/29/2024 Our collaborated review paper entitled "Advances in Understanding Dietary Fiber: Classification, Structural Characterization, Modification, and Gut Microbiome Interactions" has been accepted for publication in Comprehensive Reviews in Food Science and Food Safety.
This work was completed during Feng's post-doctoral training at Dr. Haibo Huang's lab from 2018 to 2021.

5/8/2024 We received equipment donation from PepsiCo, which includes a suite of comprehensive material testing & characterization instuments including DSC, DTC and TGA, worth a total of $360,000. This donation will significantly expand our capacity in transforming seafood byproduct into valuable materials. We appreciate Dr. Yang, Lena, and Zach for streamline the process!

Ningjing obtained her BS degree in environmental science and management from Peking University and AOS in Baking and Pastry Arts from The Culinary Institute of America. She will work on a project that converts food waste to biochar for wastewater treatment to help California alleviate from critical water shortage.
