Please check with us to ensure that we are free on your chosen date. We will also find out from you about any special dietry requirements, food allergies etc.

On the day of your event where a BUFFET Service is booked, we will arrive approximately 2 to 4 hours before the start of service, but this will vary according to the menu you choose. Chef will bring all the equipment to set up the BUFFET at your venue. we will make sure your food is Hot and Ready to serve yourselves from the BUFFET Chafing Dishes at your requested time. We will remove the equipment afterwards and decant any leftover food into containers for you to keep.

HOT BUFFET

Freshly prepared dishes to be presented in hot holding for self service hot buffet.

We will deliver and set up the food in the chafing dishes upon your designated buffet table. We will then get the dishes up to heat ready for when you wish to enjoy it, and leave you to serve yourself. We will then after you have eaten come and clear away the service wares and remove it all from the buffet area. Any leftover food will be left for the client and will be decanted into containers for client to place in refrigeration till they wish to use it. No crockery/cutlery is supplied, just the food, but we will have serving spoons with each dish for guests to serve themselves with.

PLEASE NOTE THE SET UP AND USE OF THE CHAFING DISHES FOR YOUR HOT BUFFET IS REFLECTED IN THE PRICE PER PERSON, as we have to include this service charge to you, for bringing the service to your venue.

  1. BEEF in Red Wine - A slow cooked stew made with melt in the mouth slow cooked Beef Shin, cooked in red wine, garlic and herbs, with onions, mushrooms, carrots, celery and potatoes.

  2. Coq - Au Vin - This is a well-known French chicken stew braised in a luscious, glossy red wine sauce with bacon, mushroom and onions.

  3. Vegetable (Vegan) Tikka Masala Curry - A medium heat Indian curry with an aromatic Tikka Masala sauce with coconut. A symphony of vegetables including sweet potato, butternut, chickpeas, spinach, lentils, onions, peppers and tomatoes. Finished with fresh coriander leaves. This curry can be enjoyed by everyone, and is suitable for vegans. (VG)

  4. Chicken Fricassée - A French Inspired Creamy chicken stew. Butter Browned Chicken thighs, onions, leeks and mushroom

  5. FABADA - A Spanish Pork Stew made with succulent pork pieces, chorizo sausage, white beans, onions, peppers and tomatoes in a paprika, garlic and herb sauce.

  6. Spanish Vegan Meatball Stew - (Vegan) Plant based Meatballs, White Beans, Onions, Peppers, Tomatoes and Spinach in a rich red wine, garlic, rosemary & smoked paprika tomato sauce

ABOUT YOUR CHEF

Vanessa Rousseau Richardson

Vanessa is from a town called Knysna, in the Garden Route of South Africa, just east of Cape Town South Africa. She was raised in the catering industry, as her mother was a very sucessful caterer and brilliant cook. From a young age Vanessa has enjoyed preparing lovely dishes and exploring cuisine of all kinds. Newly wed to her British hubby, Vanessa arrived in the UK in 1998. In 2000 to 2001 she worked on a High Speed train to London as a chef and in 2002 attained her Professional Catering Qualifications at Clarendon College (Nottingham). In 2003 she worked in award winning restaurant (Harts, Nottingham - https://www.hartsnottingham.co.uk/harts-kitchen-2/ ) and in 2004 started her own events & catering career in Cornwall as Gourmet's Choice Catering, where she was part of Taste of The West, which celebrates local foods from Cornwall & Devon.

Over 11 years in Cornwall, Vanessa has used her talent and flair for global food styles and tastes in creating fabulous dishes at Cornwall Food and Drink Festival, The Festival of Sea in Looe and many other events, shows, food festivals and in her own restaurant Cafe Fusion (Bodmin, Cornwall) and for private parties as a private chef.

She worked in Hampshire / Dorset between 2015 to 2018 offering her professional catering skills and creating Wedding Cake and Dessert Tower masterpieces in venues all over the New Forest, Dorset & Hampshire.

Now settled in Newport, Isle of Wight, Vanessa uses her passion for fine cuisine by making people happy with serving them fabulous food as a Private Chef and serving Gourmet Platters delivered directly to their door. She will work with you to create a wonderful menu and experience for you and your guests.
