Rustic Apple Tarts

INGREDIENTS

1⁄2 cup packed light brown sugar

2 tablespoons salted butter, room temperature

2 tablespoons of melted butter

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 sheet of frozen puff pastry, thawed out

3 medium Gala or Honeycrisp apples, peeled and cored and sliced thinly


INSTRUCTIONS

1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. In a small bowl, mix together the room temperature butter, brown sugar, cinnamon and vanilla.

2. Take the thawed pastry dough sheet.

3. Cut pastry dough into 6 equal rectangles.

4. Transfer to the baking sheet and spread a couple teaspoons of the cinnamon butter mixture onto each rectangle.

5. Place the apple slices with the skin side up onto each pastry rectangle. Fold the edges upwards, pinching to seal the corners.

6. Drizzle any remaining sugar mixture onto the apple slices. Brush edges of pastry with the melted butter. Bake in the oven 25-30 minutes, or until the edges are golden brown. Serve warm!
