Air Fryer Zucchini Coins

Cook Time: 6-8 minutes
INGREDIENTS
2-3 small zucchini, sliced thinly, about ⅛ - ¼ thick
½ cup all-purpose flour
2 teaspoons paprika
½ teaspoon salt
¼ teaspoon pepper
1½ cups (from 8 oz box) panko breadcrumbs OR crushed pork rinds
¼ cup finely grated parmesan cheese
2 eggs, beaten
INSTRUCTIONS
Slice the zucchini into ⅛ - ¼ inch thick chips, using a mandolin slicer gives you uniform thickness and allows even cooking.
In three separate bowls add…
Bowl 1 - Flour, salt & pepper, and paprika. Mix together
Bowl 2 - Eggs, beaten
Bowl 3 - Breadcrumbs or crushed pork rinds and parmesan cheese
Preheat air fryer at 400F for 5 minutes
Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs or crushed pork rinds and place on a baking rack.
Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
Fry at 400F for 6-8 minutes, flip at 4 minutes .
Cook until chips are browned and crispy
Add any additional salt or pepper to taste
Serve immediately. Store leftovers in refrigerator in airtight container
