INGREDIENTS
For “steak"1 pounds of vegan steak

For chick’n Fry Coating
2 cups all-purpose flour (for gluten free use Bobs Red Mill 1-1 Baking Flour)
1 teaspoon baking powder
Freshly ground black pepper
3/4 teaspoon paprika
2 teaspoons seasoned salt1/4 teaspoon cayenne pepper
1 cup plant based milk2 vegan eggs (I used Simple Truth Egg Replacer, or 1/2 cup of aquafaba)
For Gravy
1/2 cup white beans
2 tablespoon vegan butter or olive oil
2 cloves garlic (minced)
1/4 cup diced white onions
1 pinch each salt and pepper (plus more to taste)
1 1/2 tablespoon all-purpose flour (for gluten free use Bobs Red Mill 1-1 Baking Flour)
1 cup of water
3/4 cup unsweetened non dairy milk
1/2 tsp fresh sage or thyme (optional // chopped)
Instructions
INSTRUCTIONS
Mix together dry and wet ingredients in separate bowls.
Dip the "steak' piece first in the flour mixture then in the wet mixture and repeat until completely covered. Place on the clean plate, then repeat with the remaining "steak". Place in the fridge to cool for an hour.
To airfry:Pre heat the airfryer to 375'
Cook for 15-20 minutes until golden brown.
To pan fry:
Heat vegetable oil in a heavy skillet or large cast iron skillet over medium high heat. How much oil you need depends on the size of your skillet. You want it to be about 1/4-inch deep.
Place two "steak" into the pan at a time and fry for 3 to 4 minutes on each side or until golden brown.
Place chick’n fried “steak” on a paper towel to absorb excess oil. Serve with your favorite sides, smother with gravy, and enjoy.
For the gravy
Blend the rest of the can of white beans until smooth and set aside.
Add butter or olive oil to a cast iron skillet or large saucepan over medium high heat.
Cook down onions and add in flour. Slowly mix in milk and water then add the bean mixture . Add salt and pepper to taste. You can add mushrooms in at this point if you prefer. Continue to stir, bring just to a simmer and reduce heat to medium, stirring constantly, until gravy has thickened to desired consistency.
While the gravy is thickening prepare the chick’n fry
In a small bowl whisk together flour, spices, and baking powder. In a separate bowl mix together the batter by combining milk, flax seed egg and cornstarch.
🥢Pro Tips:
*canola or peanut oil works best if pan frying. * use aquafaba or the juice from a can of chickpeas as a cheap egg replacement in this dish. * let the battered "steak" sit in the fridge for an hour to help the batter stick to the "steak:\"
