DIY Daiya Cheezecake (soy, nut and gluten free)

🌿Full Recipe🌿


Yields: 6-7 pieces

Prep time: 15 minutes

Total Time: Chill overnight


For the Filling:

1/2 cup Coconut Milk (Canned, Full Fat, Unsweetened)

1/2 cup Coconut Oil (Melted)

¼ cup of sugar

2 tablespoon of tapioca starch/flour

1 tablespoon potato starch

1 teaspoon xanthan gum( optional)

¼ cup of pea protein

1 teaspoon vanilla extract or 1 vanilla bean

2 tablespoons lemon juice


For the cookie crust:

1 ½ cups crumbs (graham crackers, ginger snaps, pretzels, gluten-free if preferred)

¼ cup brown sugar

1/2 cup melted vegan butter


INSTRUCTIONS


For the cookie crust

  1. Store a pre made crust in the freezer or make you own by simply blending together gram crackers, brown sugar and vegan butter in a blender and then pressing into a pie pan.

  2. Store in the freezer until ready for use.


For the filling:

  1. To a large mixing bowl combine coconut milk, coconut oil and sugar.

  2. Then add in the tapioca , potato starch, and xanthan gum and protein powder.

  3. Flavor with vanilla , lemon juice and salt and mix to combine.

  4. Add mixture to a saucepan set to medium heat. Stir constantly for about 5 minutes until the mix starts to firm.

  5. Pour the filling on top of the crust and smooth down the top.

  6. Then carefully place in the fridge to set. Let the cheesecake sit for 4-6 hours.

  7. Once it has hardened remove from the pan or spring form and smooth over the edges .

  8. Serve , share with someone you love and enjoy!


Pro Tip:

*Use refined coconut oil to remove the coconut taste.

*The pea protein can be subbed for any protein powder. I prefer this Naked brand it is tasteless making it perfect to add to any dish.

*Run a large, sharp knife under hot water, wipe dry with a clean towel, and then slice. Repeat with each slice for very clean cut pieces of cheesecake.
