🌿 FULL RECIPE🌿
Yields: about 20 bites
Prep Time: 15 minutes Total Time: 1 hour
INGREDIENTS
Cheese sauce
¾ cups of plant based milk
3 tablespoons nutritional yeast
1 tablespoon potato starch or 2 tablespoons tapioca starch
½ teaspoon sea salt
¼ teaspoon garlic powder
Pinch smoked paprika
1/4 teaspoon lactic acid
1 teaspoon miso paste
Mac N’ Cheese
1 ½ cups elbow macaroni, uncooked( gluten free version)
3 tablespoons vegan butter, unsalted
1 tablespoon flour ( gluten free version)
½ teaspoon salt
nonstick cooking spray as needed
Fried Bites:
¼ cup flour ( gluten free version)
2 tablespoons of eggs replacement, beaten
¾ cup plain breadcrumbs ( gluten free version)
vegetable oil as needed
INSTRUCTIONS
Cheese Sauce
Mix together all ingredients in a blender and set aside. *
Mac N’ Cheese
Cook pasta according to package directions; drain.
In a separate 2 quart pot melt butter melt butter over low heat.
Add in cheese mixture and 1 tablespoon all-purpose flour whisking until smooth
Cook over medium-low heat, stirring constantly, until mixture is bubbly.
Remove from heat and fold the drained pasta into the cheese sauce.
To Assemble
Spray 6-inch square baking pan with nonstick cooking spray.
Spoon macaroni and cheese into pan; packing it down slightly.
Refrigerate for at least 1 hour or until completely cooled.
Place the flour, eggs replacement and breadcrumbs in three separate shallow bowls.
Cut chilled macaroni and cheese into 16 pieces.
Dip each piece in flour, then in the eggs replacement, then coat with bread crumbs.
To Fry
Cook in an airfryer at 400’ for 15 minutes. Flipping half way through.
Or skillet fry over medium-high heat, frying bites for 1-1 1/2 minutes per side
Drain bites on paper towels, serve and enjoy.
🍍 Pro Tips:
*Add the potato starch to the mixture when it is cool or make a slurry by adding a little water, before mixing into the hot mixture to avoid clumping.
*Avocado oil is one of the best oils to fry with it has a high smoke point and is flavorless making it perfect for this recipe.
*Serve immediately for the best results. If you need to reheat throw in the air fryer or oven for a couple minutes.
