Chia Seed Pudding

Nothing wakes me up like a chocolatey pudding that is not only delicious, but that is loaded with antioxidants, protein, fiber and calcium.... ok maybe coffee, but chia seed pudding is next in line! This super easy recipe can be made on Sunday, pre-portioned and enjoyed all week.

Ingredients:

  • 1/4 cup cacao powder

  • 4 tbsp maple syrup

  • 1/4 tsp sea salt

  • 1/2 tsp vanilla extract

  • 1 1/2 cups soy, almond, coconut or cows milk

  • 1/2 cup chia seeds

Directions:

  • Sift cacao powder into a bowl then whisk it together with the maple syrup, salt, and vanilla

  • Add your milk of choice a little at a time, whisking the entire time

  • Add chia seeds and whisk once more

  • Refrigerate for 3-5 hours than portion into five mason jars

  • Top with pumpkin seeds and seal for later consumption
