About some Hungarian Cakes
Dobostorta is a Hungarian sponge cake layered with chocolate buttercream and topped with caramel. It is named after its inventor, József C. Dobos, who owned a delicatessen in Budapest. At the end of the 19th century, he decided to create a cake that would last longer than other pastries in an age when cooling techniques were limited. This cake was first introduced at the National General Exhibition of Budapest in 1885. Emperor Franz Joseph and Empress Elisabeth were among the first to taste it. Then Dobostorta became popular throughout Europe for its durability and its unique appearance.
Esterházy-torta is a Hungarian cake named after Prince Paul III Anton Esterházy. According to the legend, this cake was first served to him in the late 19th century. Soon it became one of the most famous cakes in the Austro-Hungarian Monarchy. It might be interesting to note that, as we don’t have any original recipes of this cake, nowadays, it has numerous variations concerning for example the number of its layers.
Gundel-palacsinta is a pancake with walnuts, raisins and rum filling served in a dark chocolate sauce and it’s really good. In general, you can see everywhere that the first Gundel pancake was created by Károly Gundel, but there’s an anecdote saying that the original recipe was invented by Ilona Matzner (Lola), Sándor Márai’s wife (Sándor Márai was a well-known Hungarian writer of the 20th century). Her pancake was served at an event in Gundel’s restaurant and when he saw its success, he immediately wanted Lola to give him the recipe. After that, during a certain period, it was called Márai pancake, but after the family Márai emigrated and the restaurant was nationalized, this already very popular dessert got the name Gundel pancake. The original recipe is still secret, only the worldwide-known Gundel restaurant knows it.
About canteen at school in Hungary
Hungarian students don’t really have a lunch break around 12, they usually eat after their last lesson that can be late in the afternoon. That is why children always bring a sandwich, a kind of pastry, some fruit or other snacks to school so that they can eat between their lessons.
As for lunch, in Hungary, children always have a hot meal. They usually get a soup, a main dish and sometimes some fruit, fruit juice or cake. During a week, there’s some meat in the dishes at least 3 times, but recently, I think there are more vegetables as well.
Something that can be interesting is that in Hungary, we eat a lot of „főzelék” which is a kind of vegetable stew. We make it for example from green peas, potato or beans and children eat it often at school too.
There are some all time favourites for everyone like goulash soup, tomato soup with alphabet noodle, potato stew with minced meat, pasta with semolina, poppy seeds or tomato sauce, sponge cake with chocolate sauce or jam-filled roll.
About Cake of Hungary
It is connected to an important national holiday when Hungarians celebrate the Foundation of the State. The event is connected to our first king, Saint Stephen. As a result, the cake is also a birthday cake for the country. This is a competition organised every year to celebrate the most talented confectioners of Hungary and promote culinary innovation. The Hungarian Confectioner Craftsmen Corporation has organised the competition since 2007. Professional confectioners can take part in the event and one cake is chosen as the Cake of Country by a professional jury. That cake is then recreated and served throughout the country starting on 20th August (Foundation of the State). For some time, an additional category is also available where sugar-free cakes are baked.
