Yes, the phin comes in different sizes for several serving options. The single serve phin size is generally 4 ounces. A heavy single serve or double serve would be the 8 ounce phin. There are even big phins that can hold 40 ounces of water for large batch brews (family style!).

A phin or phin filter is a popular coffee brewing tool in Vietnam and the inspiration behind our signature pour over lattes. Traditionally, a phin makes about four ounces of coffee and consists of four pieces - a perforated plate that fits over your mug, a chamber that sits on top, an insert to tamp the grounds down, and a lid to hold in heat while the coffee brews.

Hi everyone! Just brought back some of those fantastic phin filters from Vietnam. I also made sure to bring back some local coffee as well, the bag was labeled as being ground to the right size for the phin.

To brew Vietnamese coffee you need French roast coffee grounds, water, condensed milk, and a phin (a Vietnamese coffee filter). Boil the water and preheat the filter and cup by adding some water through. Remove excess water, then add a heaping tablespoon of coffee into the filter.

A phin is a Vietnamese coffee filter and is used to brew Vietnamese coffee the traditional way. There is definitely nothing wrong with using a french press, espresso maker, or drip coffee machine to brew Vietnamese coffee. However, I really like the experience and process of using a phin.

There is something very calming about waiting for the coffee to slowly drip through the phin filter when I make Vietnamese iced coffee this way. There is no rushing the process. I am forced to slow down, take a deep breath, and just let it happen at its own pace.

Update: We received a suggestion from one of our readers to rinse the phin filter and the cup with/in hot boiling water so the coffee will bloom and drop better. It cleans and pre-heats the filter and it works!

How do I brew Vietnamese Coffee without it tasting too watered down? I'm using a phin filter, but I can't get the coffee to be strong as I typically get at the restaurants. I tried applying more pressure to the coffee grounds to slow down the drip and less finely ground coffee.

In my experience, it works well with a phin, if you grind the beans as for filter coffee, use two heaped tea-spoons and moderately press down the metal plate with the holes. And a good quality of the beans helps.

Most phin filters are for a single cup of coffee. Just put them on top of your cup and watch as the coffee drips. There are also bigger versions that are sometimes used in coffee shops so they can make bigger batches in one go.

Welcome to the third and final part of my exploration of traditional Vietnamese coffee following my recent visit to Vietnam. Part I covered my introduction to Vietnamese coffee and the traditional c ph phin, a cup-top metal filter. I explained how, after a few false starts, I discovered a taste for speciality coffee made with the c ph phin when I tried it at Shin Coffee in Ho Chi Minh City.

This blend is made to be savored as espresso brewed with a phin filter. You can also enjoy it as a coffee with medium grind, but we would not go to a larger size.


Adding sweetened condensed milk is a must for a more traditional Vietnamese way of enjoying this bold brew. This will help meld all the caffeine and fruitiness into a perfect cup.


Now with that out of the way, you can start using the phin! First, place the phin filter on top of your cup or coffee pot, and then add the ground coffee beans. For the best brew, we recommend you use medium ground coffee, anything too fine will lead to residue in your cup.

This was not the creamy-sweet plastic straw staple that Do, 37, had grown up on in Orange County, but coffee grown in the Central Highlands of Vietnam, brewed using a phin, a traditional metal drip filter.

Coarsely ground beans go into a French drip filter (called a phin), which sits on top of the cup. The beans are weighted down with a thin lid, hot water is added to the phin, and then the water slowly trickles through into the cup. This operation should be repeated at least twice before the drip actually produces enough coffee to be enjoyed.


You can enjoy c ph using the brewing method of your choice; however, cafes in Vietnam often use a traditional phin filter. This tool combines the best features of the French press and V60 coffee dripper. Part pour-over, part gravity-extraction, phin filters are exceptionally versatile and produce a rich, bold, concentrated brew with low acidity.

Place 2 tablespoons (or about 14 grams) of ground Vietnamese coffee into the brewing chamber of the phin filter. Shake the brewing chamber so that the coffee grounds are leveled straight across. This allows for the hot water you pour in to distribute across all of the coffee for an even extraction process.
