The Province of Bulacan is known for its historical and heritage sites, but when it comes to food, the province has notable offerings for people who want to try its delicacies. Butse, also known as chicharon buchi, butseron, or buchiron, is a popular Filipino food. It's made from the chicken crop, a byproduct of chicken meat production. Because only one butse can be obtained from each chicken, a large number of chickens must be slaughtered to produce a significant amount of this delicacy. Filipinos have transformed this previously discarded part of the chicken into a tasty and sought-after snack. Butseron is typically cut in half and fried until crispy.
Filipinos make something beneficial from all the parts in a dressed chicken. So, aside from street foods like isaw, locals of Bulacan came up with the idea of creating a signature delicacy they call Bucheron or Buchiron. Buchiron is made from chicken gizzard or balun-balunan in Tagalog.
Each bite brings a burst of joy, accompanied by the "linamnam" factor enhanced with a contemporary twist of added spices. You can choose between the original or spicy flavor. The tastiness and deliciousness of the Butcheron can be felt more when paired with suka (vinegar). Some people add chili to it for an extra kick while eating. The Butcheron has also been eaten at parties like family gatherings or birthday parties. It is used as pulutan by people who are drinking at parties and is a great partner with drinks while socializing with friends or family.
