Ingredients:
2 1/4 cups (270 g) of all-purpose flour
1 1/2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
2 tbsp Bustelo ground coffee (optional)
3/4 cup (170 g) of room temperature unsalted butter
3/4 cup (170 g) of light brown sugar
1/2 cup (50 g) of granulated sugar
1 large egg and 1 egg yolk at room temperature
3 tsp of vanilla extract
White choclate chips to taste
Directions:
Whisk flour, cornstarch, baking soda, salt, and coffee powder (if using)Â in a mixing bowl
In a stand-mixer, whisk butter, brown sugar, and granulated sugar together until smooth
Whisk in egg and egg yolk
Whisk in vanilla until combined
Add dry ingredients to wet ingredients. Add chocolate chips and mix slowly until barely combined
Cover and chill for ~2 hours
Preheat oven to 315F (170C)
Roll balls of dough (about 1 1/2 inches in diameter). Place 2 1/2 inches apart on cookie sheet
Bake for 11-12 minutes and then allow to rest
