Plant Based Recipe
Hey friends! Welcome back to Life is Messy But I Am Learning as I Grow! Today, I’m sharing one of my favorite vegan Instant Pot recipes — a creamy tomato soup that’s 100% plant-based, dairy-free, and deliciously comforting. This easy Instant Pot soup recipe is perfect for fall and winter, packed with flavor and creamy goodness without any cream! Clean and chop your carrots and onions.
Set your Instant Pot to Sauté. Water Sauté your onions first for about 1 minute. Then add in your carrots and Sauté for 3 more minutes. Turn off Sauté mode.
Add all of your broth to your pot. Deglaze the bottom of your Instant Pot. Add your tomatoes, coconut milk, and basil. Thoroughly stir. Seal your lid and pressure cook for 5 minutes.
Once finished cooking, allow your pressure to slow release.
Blend with an immersion blender till you have reached your desired consistency.
Salt & Pepper to Taste.
