Tomato Garlic Vinaigrette

Ingredients (1 cup)

  • 1 clove garlic, finely chopped
  • 6 campari tomatoes, seeded and finely diced
  • 3 tablespoons white wine vinegar
  • 1 teaspoon paprika
  • 1/4 cup extra virgin olive oil
  • pinch of salt and pepper

Instructions

In a small bowl, whisk together the garlic, tomatoes, vinegar, paprika, olive oil and a pinch of salt and pepper until combined.

Refrigerate for 30 minutes and whisk again before using.

Store for up to two days in the refrigerator.
