Plant Based Recipe
Soup season is finally here, and nothing says cozy like a big bowl of noodle soup. This tofu noodle soup has all the comforting flavors of classic chicken noodle soup—but it’s completely vegan, vegetarian, and plant-based. And let’s be real, even vegans want that go-to soup when we’re sick. The best part? It comes together in the Instant Pot with simple, no-fuss steps. Warm, hearty, and perfect for chilly days.
Clean and chop your celery, carrots, and onions. Cut your tofu into chunks.
Set your Instant Pot to Sauté. Water Sauté your tofu, garlic, and onions till golden brown. Add in your celery and carrots. Sauté for 5 more minutes. Turn off Sauté mode.
Add your broth. Deglaze your pot. Add in all of your remaining ingredients. Seal your lid and pressure cook for 3 minutes. Once finished cooking, allow your pressure to slow release.
Salt and Pepper to Taste.
For better tofu, freeze your package of tofu and then defrost before cooking. This will help keep your tofu from falling apart as easily and will give it a chewy meaty type texture.
And there we go—Instant Pot tofu noodle soup that’s cozy, easy, and totally hits the spot. It’s proof that comfort food doesn’t need meat or dairy to be soul-warming. So grab a spoon, slurp it up, and enjoy the cozy vibes (messy kitchen and all). We’re learning, we’re growing, and tonight… we’re eating soup.
