Healthy, fast-casual favorite Toastique is officially making its Long Island debut, taking over a beloved Woodbury storefront with a fresh, modern twist.
Long Island’s appetite for health-forward dining is only getting stronger, and Toastique—a national café concept known for gourmet toasts, cold-pressed juices, smoothies, and coffee—is stepping into the market at just the right time. The brand will open its first Long Island outpost at 8027 Jericho Turnpike in the Woodbury Country Square center, filling the longtime former home of Dugan’s Sandwich Shop with something colorful, modern, and decidedly on-trend.
The new 1,632-square-foot café is expected to open in the first quarter of next year, giving Woodbury residents a fresh destination for healthy breakfasts, quick lunches, and post-workout fuel. Its spot next to the golf course and the park makes it an easy grab-and-go stop for locals on the move.
Toastique Woodbury will be owned and operated by Christopher and Andrea Pedersen, a husband-and-wife team well known in the franchise world.
Andrea Pedersen has built a career on the franchisor side with brands like Massage Envy, Sky Zone, Garage Kings, and most recently, sugaringLA.
Chris Pedersen, a former Local 3 union electrician, launched his first franchise in 2008 and now operates multiple units across Massage Envy, Orangetheory Fitness, European Wax Center, and Amazing Lash Studio.
The two were drawn to Toastique’s commitment to clean, fresh food that appeals to families and health-conscious diners. “It’s the kind of place we would visit ourselves,” Chris Pedersen told LIBN.
Toastique’s menu is all about elevated simplicity—fresh ingredients served with style. Long Islanders can expect signature gourmet toasts such as the Avocado Smash, Smoked Salmon, and PB Crunch, all fully customizable.

Founded in 2018 by Brianna Keefe in Washington, D.C., Toastique has quickly grown to over 50 locations nationwide, with many more in development. The all-in franchise investment ranges from $371,117 to $846,342, and stores average $712,148 in annual sales, according to company data.
