How to make Malt?
Grain (usually barley) that has been steeped, germinated, kilned used for brewing/distilling and other processes
Grain soaked in water → moisture content upwards of 40%
Can be multiple stages → aeration = growth
Grain allowed to grow/sprout, develop enzymes
Enzymes break down starch during brewing/distilling
Reduces grain moisture content (about 5%)
Free dry → forced dry → curing stage
Produces color/flavors
