At the 9th International Conference on Food Digestion (#ICFD2026) in Gdańsk, Poland, around 400 researchers shared high-quality research, exchanged ideas, built collaborations, and undoubtedly left with even more research questions than answers.
It was a proud moment to see postgraduate researcher Niamh Fitzgibbon present a poster on the #TRANSFORM project, funded by the Department of Agriculture, Food and the Marine. Her work focuses on determining the digestibility of thermo-reversible protein gels designed for cancer patients, contributing to the development of more effective and patient-centred nutritional solutions.
It has been a pleasure to host Yelyzaveta Sokolova in Prof. Seamus O'Mahony's lab over the last 10 weeks. Lisa has been working on thermoreversible gelation of milk proteins for clinical nutrition applications as part of the Department of Agriculture, Food and the Marine funded TRANSFORM project. She presented her placement activities at Munster Technological University work placement presentations today and did a great job.
