Cakes are one of life's little luxuries that can be found at the heart of every party whether it's a Wedding, Christmas, Birthday or Christening. Perhaps some of us wish that every day of the week was a special occasion.
In case you're not a wizard in the kitchen we held a PRIZE DRAW to inspire you.
When my family takes over the kitchen to create these treats the scene sometimes resembles a war zone with clouds of flour, chocolate and butter decorating places they shouldn't. The clean up afterwards isn't fun but the rewards make it worthwhile.
There's an art to making great tasting cakes but you need both an artistic eye and the technical skills to make something amazing. We've found it locally with Baked by Niamh so we asked her to tell us more:
My family has a great tradition of cooks and home bakers- my granny Betty’s Pavlova was practically famous! When I started studying Chemistry at university I realised I could combine my 2 big interests of baking and science, and so my experimentation in the kitchen began.
After many years of baking for family, friends and colleagues I was encouraged to audition for the Great Irish Bake Off. I made it to the final 30 contestants and really enjoyed the experience. My highlight was Paul Kelly Executive Pastry Chef at the Merrion Hotel in Dublin commenting that my homemade lemon curd was to die for!
The popularity of the TV show 'The Great Bake Off' has inspired many to return to the kitchen.
The Irish spin off version sadly came to an end after 3 seasons whilst the UK version is on it's 8th season and is still attracting millions of viewers.
Baked by Niamh was launched in early 2016 and I am happy to say that I have baked for many happy customers for lots of special and everyday occasions since then. My favourite occasions to bake for are weddings, it can be challenging but I just love working with couples to create something stunning for their big day. I can take bookings for wedding cakes up to a year in advance! Wedding cakes start with a consultation with the couple where I get an idea of what they are looking for in terms of design, flavours and themes. Baking and decorating the wedding cake can take several days, not to mention delivery and setting up in the venue.
I also have lots of experience making cupcakes, and I really enjoy customising them for a client’s event.
Christmas and Halloween are fun themes and I have even made Piñata style cupcakes for a Mexican themed event.
Last Easter I was featured on Lovin Dublin’s instagram in a post that went viral, featuring a chocoholic’s dream cake.
I love cakes that have loads of character, whether it’s a unicorn, flowers and meringues, or piles of chocolates and sweets.
At the centre of my business is a genuine love of good food, and I guarantee that all ingredients used are high quality, fresh and Irish when possible. You won’t find any margarine in my baking, it’s real butter all the way and your taste buds will thank you for it!
