1 large sweet potato
1/2 purple onion
1 clove of garlic
2 bell peppers
jalapeno (optional)
1 tbsp rosemary
1 tbsp avocado oil
Step 1
Chop sweet potato into 1inch cubes.
Step 2
Heat avocado oil in skillet on medium high heat.
Step 3
Add sweet potatoes and let cook for 10 minutes while covered.
Step 4
While it is cooking, chop onions, garlic, bell peppers and jalapeno. Add to pan for 5 minutes. Serve while it's fresh and hot.
2 large sweet, crisp apples (Honeycrisp, Gala, Fuji)
⅓ cup apple cider vinaigrette
½ teaspoon ground cinnamon
¼ teaspoon ground red pepper
1 bag baby arugula (4–5 oz)

Step 1
Cut apples in half and remove core; cut apples into small bite-size pieces (3 cups).
Step 2
Whisk in salad bowl: vinaigrette, cinnamon, and red pepper. Add apples and toss to coat.

Add greens and nut topping; toss and serve.

1/2 cup of granulated sugar
1 cup of brown sugar
2 eggs
2 tsp of vanilla extract
2 tsp of maple extract
3 cups of all purpose flour
1 tsp of baking soda
1 tsp of salt
1 cup of chopped pecans

Step 1
Preheat oven to 350 degrees F.
Step 2
Combine flour, baking soda, and salt in a bowl, and set to the side.
Step 3
Use a hand or stand mixer to mix butter and sugars on low speed until well combined.
Step 4
Add eggs one at a time to your butter mixture.
Step 5
Add vanilla and maple extracts.
Step 6
Begin to add your flour mixture 1/2 cup at a time on low speed until your mixture forms a firm dough.
Step 7
Stir in chopped pecans.
Step 8
Chill in fridge for 30 minutes.
Step 9
Line baking sheet with parchment paper. Use an ice cream scoop to form the dough into balls. Bake for 12 minutes.

1 lb of Brussel Sprouts
3 tbsp of Olive Oil
1/2 tsp of salt and pepper
1/2 oz garlic powder
3 tbsp of maple syrup
Baking pan
Step 1
Preheat oven to 400 degrees F.
Step 2
Wash and cut Brussel Sprouts in half.
Step 3
Add Brussel sprouts, oil, and seasonings to a large bowl. Toss to fully coat the sprouts.
Step 4
Spread the sprouts onto a large baking sheet.
Step 5
Roast in the oven for a total of 10 minutes and flip the sprouts. Place the pan back in the oven for 10 minutes.
Step 6
Take the pan out the oven, and pour maple syrup over the sprouts.
Step 7
Place the pan back in the oven for an additional 5 minutes.
Step 8
Cool and enjoy!
1 tablespoon avocado oil

In medium saucepan, heat the oil over medium heat.

Add the zucchini, onion, and salt to the pan and cook, stirring, until the onion is translucent and the zucchini is tender (about 5 minutes).

Lower the heat to medium low, add the peas and carrots, corn and edamame and cook, stirring (about 1 minute).

Transfer the mixture to a large bowl and let cool.

Toss with the tomatoes and lemon juice.

Step 1
Preheat the oven to 275 degrees F.

Line a baking sheet with parchment paper.
Step 3
Remove the thick stem from the kale and discard. Tear the kale leaves into bite-size pieces. Lay the kale onto the prepared baking sheet and spray evenly with cooking spray.
Step 4
Bake until crispy and browned on the edges, tossing the kale halfway through (18 - 20 mins).
Step 5
Sprinkle the kale with BBQ Seasoning and serve.

1/4 of melted coconut oil
1/4 cup of unsweetened apple sauce
1 Granny Smith Apple
Steps
Preheat over to 350*F
Spray a baking pan with non-stick spray
Peel and grate Granny Smith apple.
Combine your egg, milk, coconut oil, applesauce, and vanilla extract into a bowl and set aside
Combine oats, flour, cinnamon, baking powder, and salt in a separate bowl
Begin to add your flour and oat mixture to your wet ingredients
Stir in grated apple
Pour batter in baking pan
Bake for 35 minutes

Ingredients
3 cups of cranberry juice
Juice of 1 orange (about 1/2 c.)
1 (12-oz.) can seltzer
1 orange, sliced
1 apple, cored and sliced
1/3 cup of frozen cranberries

In a large pitcher, combine cranberry juice, orange juice, and seltzer. Add fruit and basil and stir to combine.

Ingredients
2 ½ cups (312 grams) all purpose flour
½ tsp baking powder
¼ tsp baking soda
1 ½ tsp
2 tbs olive oil
¾ cup water
3 tbs coconut cream
2 tbs coconut oil
1 garlic clove
Chopped fresh cilantro, for serving
Steps
In a large bowl, stir together the all-purpose flour, baking powder, baking soda, and kosher salt. Add the olive oil, water, and coconut cream and stir until the dough comes together. If it is dry, add a bit more water; if it is very sticky, add a sprinkle more flour. Knead for about 30 seconds to a minute until all the flour is incorporated and a dough ball forms.
Transfer the dough to a lightly oiled bowl. Rest for 30 minutes at room temperature covered with a towel.
Once the dough has rested, flatten it into a disc. Then cut it into 6 equal pieces. On a clean, lightly floured countertop, roll each dough into a thin teardrop shape, about ⅛ inch thick.
Meanwhile, grate the garlic. Heat the butter and garlic in a small saucepan over medium-low heat. Cook for 1 to 2 minutes until the garlic fragrant starts to turn yellow (but not brown), then immediately remove from the heat.
Heat a cast iron skillet, griddle, or large skillet over very high heat until it’s blazing hot (make sure it’s as hot as possible, or the first piece won’t cook correctly). Add one of the pieces of dough and cook until the top has bubbles and the bottom is golden and very dark brown in spots (about 1 minute), then turn and cook another 30 seconds to 1 minute on the other side. Brush the naan with a bit of the garlic butter on both sides.
Serve immediately with chopped cilantro.

1/4 cup of lemon juice
1/4 cup of soy sauce

Steps
Clean salmon fillets and pat dry. Season to your liking and pour olive oil on the salmon.
Spray a baking pan with non-stick spray.
Combine honey , lemon juice, minced garlic, soy sauce, and seasonings in a bowl and set aside.
Place salmon in air fryer and cook at 340 degrees for 12 minutes.
Take the salmon out of air fryer, and rub the honey glaze onto to the salmon.
Place the salmon back into the oven at 375 degrees for 8 minutes.
Cool and enjoy!

2 tsp unsweetened apple juice
1 tsp of water
1 tsp of rice wine vinegar
1 tsp of lemon juice
1 tsp of olive oil
1/4 tsp of white sugar
1/4 tsp of Dijon mustard
1/8 tsp of salt
Steps
Whisk together ingredients in a bowl.
Refrigerate for 15 minutes.
Pour over your choice of lettuce or mixed greens and enjoy!
Ingredients
1 bag Cauliflower florets
3 tbsp of olive oil
1 tsp of garlic powder
1/2 tsp of salt and pepper
1 tsp of oregano
1/2 cup of grated parmesan cheese

Non-stick spray
Steps
Preheat oven to 425 degrees
Wash cauliflower and pat dry.
Add the cauliflower, olive oil, seasonings, and cheese into a bowl. Stir until fully coated.
Spray your baking pan with non-stick spray. Pour the cauliflower mixture onto your baking pan and spread evenly.
Bake for 20 minutes. After 20 minutes, flip the cauliflower and bake for an additional 10 minutes.
Cool and enjoy!

1.5 cups of vanilla yogurt
1 cup of chopped strawberries
1 cup of blueberries

Muffin baking tin
Steps
Combine the yogurt and berries in a small bowl
Line the muffin baking tin with the cupcake liners
Place mixture into the muffin pan. Wipe the top clean to remove any excess yogurt with a damp paper towel.
Freeze for 3 hours, or until frozen. Place yogurt bites in a zip top bag or freezer safe container and store in the freezer until ready to serve

5 cups of rolled old fashioned oats
½ cup of honey
1 tsp of vanilla extract
½ tsp of salt
½ tsp of cinnamon
¼ cup of light brown sugar
¼ cup of canola oil
Optional mix-ins: ½ cup of sliced almonds or dried cranberries or raisins
Directions
Preheat oven to 300 degrees.
Line baking sheet with parchment paper and set aside.
Whisk together honey, vanilla extract, cinnamon, salt, brown sugar, and canola oil.
Stir in oats and mix until combined.
Spread mixture evenly onto your parchment lined baking sheet
Bake for 7 minutes. Remove from oven and stir.
Place the baking sheet back into the oven for an additional 10 minutes.
Remove baking sheet from oven and stir mixture. Cool and enjoy!
Note: Store the granola in an airtight container to preserve freshness.
