The Palate is a new restaurant concept by Groundswell Brewing Co. with a menu inspired by the diverse population of South San Diego County. Operating from a 1,000-square-foot kitchen attached to Groundswell-Chula Vista, The Palate serves artisan pizzas using locally-grown ingredients and with a focus on the crust. A 72-hour fermentation of the dough allows for the breakdown of sugars and starch in the dough resulting in a higher, airy crust that is easier to digest.
The goal is to create a pizza that is approachable -- so guests know what to expect -- and introduce savory culinary techniques. Weekly specials will merge culinary staples with pizza.
