Creamy Tuscan Shrimp with Spinach
Ingredients:
- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup baby spinach leaves
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste

Instructions:
1. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
2. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink. Remove the shrimp from the skillet and set aside.
3. In the same skillet, pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer.
4. Stir in the sun-dried tomatoes, baby spinach leaves, grated Parmesan cheese, dried Italian seasoning, salt, and pepper. Cook for a few minutes until the spinach wilts and the sauce thickens slightly.
5. Return the cooked shrimp to the skillet and toss them in the creamy sauce to coat.
6. Continue to cook for another 2-3 minutes until the shrimp are heated through and fully coated in the sauce.
7. Serve the creamy Tuscan shrimp with spinach over cauliflower rice, zucchini noodles, or alongside a fresh salad.
