Qingyuan chicken is a specialty of the Qingyuan area in Guangdong, and it can be prepared in various ways. Below is a method for making plain boiled Qingyuan chicken:
Materials required
• A Qingyuan chicken
• Appropriate amount of ginger and green onions
• Appropriate amount of salt and cooking oil
1. 選雞:要挑選正宗的清遠雞,其體型較小,肉質鮮美,雞皮金黃。
I. Choose the chicken: Select authentic Qingyuan chicken, which is smaller in size, has delicious meat, and features golden-yellow skin.
2. 處理雞:將雞清洗乾淨,去除雜毛和內臟,在雞肚內放入薑片和蔥段,以去腥增香。
II. Preparing the chicken: Clean the chicken, and remove any feathers and internal organs. Place slices of ginger and sections of scallions inside the chicken to remove the fishy smell and increase the fragrance.
3. 水煮:鍋中加入足量清水,水燒至60度後放入雞,加入適量薑片,煮約15分鐘後關火,燜15-20分鐘,具體時間根據雞的大小調整,以確保雞肉熟透且鮮嫩。
III. Boiling: Add enough water to a pot and boil the water to 60 degrees. Then, add the chicken with an appropriate amount of ginger slices. Boil for about 15 minutes, then turn off the heat and simmer for 15-20 minutes. Adjust the time according to the size of the chicken to ensure the meat is fully cooked and tender.
4. 過冷河:將煮好的雞撈出,迅速放入冰水中浸泡,使雞皮更加爽滑。
IV. Shocking in cold water: Take out the cooked chicken and quickly soak it in ice water to make the chicken skin more smooth and slippery.
5. 製作蘸料:將姜切成末,加入蔥花,倒入熱油激發出香味,再加入適量鹽和生抽,攪拌均勻,製成蘸料。
V. Make the Dipping Sauce: Chop the ginger and scallions into small pieces, and add them together. Pour in hot oil to stimulate the aroma, then add an appropriate amount of salt and light soy sauce, mixing well to create the dipping sauce.
6. 切塊擺盤:將雞從冰水中取出,瀝乾水分,切成均勻的塊狀,擺盤即可,食用時可蘸上特製的蘸料。
VI. Cutting and Plating: Remove the chicken from the ice water and drain off the excess water. Cut it into even pieces and plate it. Serve with the special dipping sauce.
