Oyster Mushroom and Chorizo Pasta

Mixed Mushroom Dumplings

Preparation 15 minutes

Cooking 20 mins

Makes 15

Ingredients

  • 2 tbs sesame oil

  • 2 cm piece of grated ginger

  • 2 crushed garlic cloves

  • 100 grams of mixed mushrooms finely chopped

  • 2 spring onions finely chopped

  • 3 cups of baby spinach leaves

  • 2 tbs of soy sauce

  • 15 dumpling wrappers

To make filling

  1. Heat oil in a frying pan over medium heat

  2. Cook ginger and garlic for 1 minute

  3. Add mushrooms, onion and spinach to the pan and cook stirring for 5 minutes

  4. Add soy sauce and cook for 2 minutes of until sauce has been absorbed

  5. Set aside to cool completely.

To fill dumplings

  1. Place approx. 2 tsp of cooled mixture in the center of wrapper

  2. Wet the border of wrapper with a small amount of water

  3. Fold wrapper in half over the mixture

  4. Working in one direction, gather the edges of the wrapper and pinch to enclose filling

  5. Bring the pinched section forward and bring over un-pinched section of wrapper and pinch

  6. Continue to pleat the wrapper until enclosed

  7. Repeat with remaining mixture and wrappers

To cook dumplings

To steam the dumplings, cook in your preferred steam method for 7 minutes or until the wrapper is tender.

For fried dumplings:

  1. Heat 1 tbs of oil in a non stick frying pan

  2. Cook dumpling on each side until they start to brown

  3. Add approx 1/4 cup of water to the pan and cover with lid

  4. Dumplings are ready when the wrapper is tender.
