Ingredients:
1 cup mung beans
6 cups water
4–6 tablespoons rock sugar (adjust to taste)
1 pandan leaf (optional, for added fragrance)
1/4 cup sago pearls (optional, for a chewy texture)
Coconut milk (optional, for creaminess)
Instructions:
Rinse the adzuki beans and soak them in water for at least 2 hours (or overnight for a softer texture).
Drain the beans and place them in a pot with 4 cups of water. Bring to a boil.
Lower the heat and simmer for about 45 minutes to an hour, until the beans are soft.
Add rock sugar and dried tangerine peel, stirring until the sugar dissolves.
If desired, stir in coconut milk for a creamier texture.
If you like, add glutinous rice balls or sago pearls for a chewy contrast.
Serve warm or chilled and enjoy!
When the heat got bad, my grandma would make mung bean soup. I loved watching her drop the sago pearls into the pot—little white beads that turned soft and clear as they cooked. The whole house would smell like sweet beans, and she’d let it simmer(boil gently) forever, stirring slowly.
