Class Overview

C.A.F.E is offered on both a shared-time and full-time basis over a four-year period. Students train in classrooms/shops that replicate the actual work environment of a food service/retail operation. In addition to mastering the skills required for various food industry jobs, students learn the importance of team effort, safety, sanitation, good communication and a positive work ethic.

The curriculum contains the major skills of a successful food service career: Human Relations/Customer Service; Point of Sale training; Grocery; Produce; Bakery; Merchandising and Display; Food Preparation, Inventory and Receiving.

Each student will have the opportunity to use the tools and equipment of C.A.F.E. and to learn how to properly and safely perform the operations of the trade, including the evaluation of completed work.

Students will have shop experience not only in the mastery of manipulative skills but also in related information or technology and theory. Under the direction of the instructor, the student will learn the how and why of operational skills.

About me

I am a graduate of Academy of Culinary Arts in Mays Landing New Jersey. I have been in the food service industry for over 27 years, specializing in supermarkets for the last 18, in several capacities.
