Recipe: The Crispiest Gluten Free Onion Rings

Let's be honest, going gluten-free can feel like a culinary tragedy sometimes. Say goodbye to crispy, golden onion rings, right? (We miss you Red Robin!)
This recipe is here to prove that delicious, gluten-free onion rings are NOT a myth. They're real, they're spectacular, and they'll make you question why you ever settled for those limp, sad excuses for onion rings in the first place. I like to make the sauce first, that way it has time to chill while I fry the onion rings.
Gluten-Free Onion Rings
Ingredients:
1-2 large onions
Large bowl of ice water
1 cup gluten-free flour
1/4 cup cornstarch
1-2 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper (adjust to taste)
2 large eggs, beaten
Vegetable oil, for frying
Instructions:
Slice in to rings, separate and drop into bowl of ice water while you prepare your batter and oil.
Prepare the batter: In a shallow dish, whisk together the gluten-free flour, cornstarch, onion powder, salt, pepper, garlic powder, and cayenne pepper.
Drain the onions: drain the ice water and pat the rings dry with paper towel.
Dip the onions: Dip each onion ring in the beaten eggs, then coat in the flour mixture. Repeat this process TWICE for each ring.
Fry the onion rings: Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the onion rings to the hot oil, being careful not to over crowd the pot, and fry until golden brown, about 2-3 minutes per side.
Drain and serve: Remove the onion rings from the oil and drain on paper towels. Serve immediately with your favorite dipping sauce.
For the Camp Fire Sauce:
Ingredients:
⅔ cup mayonnaise
⅓ cup hickory BBQ Sauce
1 teaspoon brown mustard
½ teaspoon honey
½ teaspoon chipotle powder
¼ teaspoon smoked paprika
Instructions:
Combine: In a medium bowl, whisk together all ingredients until smooth and well combined.
Chill: Cover and refrigerate for at least 2 hours to allow the flavors to meld. This will enhance the overall taste.
